Michael Schiemer 0945378f1f fix: add --ignore-platform-reqs to composer install in workflows ...

- Required because composer.json requires PHP ^8.5
- But we install PHP 8.3 (closest available via sury.org)
- Tests can still run correctly with platform requirements ignored
