fix: rename GITEA_TOKEN to CI_TOKEN in workflows

Browse Source 
- Change secret name from GITEA_TOKEN to CI_TOKEN
- Gitea doesn't allow secrets starting with GITEA_
- Update all checkout steps to use CI_TOKEN instead
